For the holiday season I wanted to make a healthy version of mashed potatoes. Traditionally mashed potatoes are made with a lot of butter and topped with more butter and possibly gravy. To make these healthier I substituted some of the russet potatoes with sweet potatoes. I used an equal portion of each and the result was wonderful! They were seasoned with salt and pepper and the sweet potatoes added enough flavor that I did not need to add butter.

The mashed sweet potatoes are easy and required very few ingredients. They made great left overs as well. Let me know if you came up with any healthy recipes over the holidays.
